Day 61
It was time to harvest the basil from the yard and make a few jars of pesto. It smells so good! I use pesto with spaghetti squash (or pasta for the boys) usually with lots of sauteed mushrooms. Here is the recipe I used this time:
2 cups basil leaves
1 cup parsley leaves
¼ cup walnuts
¼ cup Parmesan cheese
3 garlic cloves
Salt and pepper to taste
¼ cup extra virgin olive oil
Just add all the ingredients to a food processor (except for oil), pulse, then drizzle olive oil as the food processor is running. Adjust seasonings. That’s it. I had a whole plant and made three batches.
Having this on hand makes it easy to have a delicious end of summer no-sugar meal. Even if you don’t make your own pesto sauce, it’s a good thing to have in the pantry for a quick weeknight meal, and it’s sugar free.
