It's a bit chilly this Sunday morning so I’m treating myself to a warm pumpkin spice smoothie with no added sugar! The cooler weather calls for warmer foods, and even your morning smoothie can be warm. You can used canned pumpkin, or a cooked small sugar pumpkin and use it for all kinds of recipes, including chili.
Here is the recipe:
Serves 1
Prep time: 5 minutes
Cooking time: 4 minutes
Ingredients:
½ cup water
¼ cup rolled oats
½ cup pureed pumpkin, canned
½ tsp. pumpkin pie spice
1 Tbsp almond butter
1 tsp chia seeds
1/3 cup unsweetened almond mil
½ banana
Directions:
1. Add the water and oats to a saucepan over medium-low heat. Bring to a simmer and cook for 4 minutes. Add the pumpkin and pumpkin pie spice. Stir to combine.
2. Add the pumpkin and oat mixture to a blender along with the remaining ingredients. Blend carefully, allowing space for the heat to escape, until smooth and creamy.
3. Serve warm and enjoy!
