Yesterday I made the coconut cranberry balls and I’d say they are a winner. They were easy to come together, once you have all of the ingredients, and would make a nice holiday gift, or hostess gift when visiting friends and family. Of course, you can always save them for yourself! When buying the ingredients be sure to buy no sugar added coconut as well as no sugar added dried cranberries. I found an organic no sugar added shredded coconut in my regular supermarket.
Here’s the recipe.
Ingredients:
1 cup shredded coconut
½ cup oat flour (or almond meal)
½ cup dried no sugar added dried cranberries
8 Medjool dates (pitted)
1 tsp vanilla extract
1 Tbsp water
Plus 2 Tbsp shredded coconut for dusting
Directions:
Combine all ingredients except for water and coconut for dusting in food processor.
Blend until ingredients are a course mealy consistency. To test if they’ll form balls, squeeze enough of the mixture together between your clean thumb and index finger. If it sticks together, you are ready to form balls. If not then add 1 tablespoon of water, then retest.
Roll the mixture into balls (about 16)
Roll the balls in remaining 2 Tbsp shredded coconut
If coconut doesn’t stick, moisten the balls with a bit of water.
Refrigerate in sealed container. The coconut balls will last about 5-7 days in the refrigerator and a month in the freezer.
The beauty of this recipe is you only need one ball for a sweet treat snack or dessert. It’s sweet from the dried fruit, but no added sugar.
